A wild walk in the forest for the MAD symposium.
Thomas will lead a foraging trip into the sand dunes and Danish forest to explain the wild ingredients we collect and why foraging became the backbone of modern Danish cuisine for restaurants such as Noma, Geranium, Amass, Kadeau and Alchemist to name a few.
Maddy will bring support with stories and tastes of natural wines.
This is a fantastic opportunity for visiting chefs, sommeliers, and those curious about the Danish food scene to connect with the season, learn from some of Denmark´s best, and enjoy a deeply local experience.
Date: Saturday 24th May
Time: 10 am start (sharp)
Plan: 2,5hr foraging trip including snacks and wine.
Meeting point: Christianshavn Metro – Bus Stop (bus included in the price)
